Red Prawn Essence is a versatile and refined ingredient, perfect for enhancing a variety of dishes. It can be added while cooking risotto to add a deep flavor and seafood aroma, ideal for seafood risottos.
It is also excellent as a base for sauces to go with grilled or steamed fish. Pasta, seasoned with this essence, is transformed into a quick but impressive dish, pairing beautifully with linguine, spaghetti or noodles, enriched with shrimp or other seafood.
This shrimp bisque is also an excellent complement to fish soups, intensifying their seafood flavor.
What makes Sicilian red prawns special?
Don Gambero red prawns live at a depth of about 700 meters, where strong sea currents help make the meat firm and the high evaporation that the Mediterranean Sea undergoes in the warm season enriches the shrimp with mineral salts, giving it unmistakable flavor.
Ammaru Russu, the Sicilian name for Red Prawn, is also distinguished by its low calorie content and its high iodine content-a mineral that helps the proper functioning of our metabolism and regulates our energy level.

The Company
Founded in 2014, Don Gambero is a dynamic fish company in Mazara del Vallo, in Sicily, that has inherited a long tradition of sailors and fishermen in the temple of Red Prawn, also known as Ammaru Russu.
Not only Red Shrimp in various versions (whole, tails only and in tartare) but many other products frozen on board, selected and expertly processed: the best catch of the Egadi, Sciacca, Trapani and Mazara del Vallo.
