The baby squid is a very small mollusk - between 3 and 5 cm - that is widespread in the Mediterranean Sea.
Like all Don Gambero products, freshly caught, it is shot down in certified fishing boat laboratories with a very high heat shock: processing is done quickly without rinsing or glazing to maintain all the freshness of the product.
Baby squid are packed in special 200g vacuum-packed pouches that guarantee unchanged structure, flavor, aroma and nutritional values.
The convenience of Don Gambero's "Ready-to-Use" Range: thawing the product will only take about ten minutes in cold water, after which you can simply take out the baby squid, which will have retained all their freshness.
Chef's Advice
It is mostly cooked fried or seared in a pan, steamed or, why not, even in a first course. A true delicacy of the sea!

Depending on market availability, red shrimp could be sourced from vessels not flying the Italian flag, but still fished in the Ionian Sea FAO Zone 37.2.2 and processed in Mazara del Vallo plants.

Founded in 2014, Don Gambero is a dynamic fish company in Mazara del Vallo, in Sicily, that has inherited a long tradition of sailors and fishermen in the temple of Red Prawn, also known as Ammaru Russu.
Not only Red Shrimp in various versions (whole, tails only and in tartare) but many other products frozen on board, selected and expertly processed: the best catch of the Egadi, Sciacca, Trapani and Mazara del Vallo.
Defrosting and use instructions: defrost the product in the refrigerator. Once defrosted, the product must not be refrozen and must be kept in the refrigerator and consumed within 24 hours.
