But what if we wanted to take our Sicilian red prawn on a tour of Asia? We have Giorgio Guglielmetti, company chef at Longino, to give us a fusion recipe with this prized Sicilian red shrimp.
In the recipe he will combine red shrimp, miso soup and mullet roe to create a recipe that is rich in flavor and very easy to replicate.

Red Prawn, Miso and Mullet Roe
Ingredients for 4 people
- Sicilian Red Prawn 12 pcs
- Sea lettuce 200 g
- Shiro Miso 2 spoons
- Akadashi Miso 2 spoons
- Soy sauce 2 spoons
- Lemon juice 1 spoon
- Katsuobushi
- Soft mullet roe
Method
- Rinse the sea lettuce
- In a saucepan with water add sea lettuce, miso, soy sauce and lemon juice
- Clean the shrimp by removing the intestines
- Add the shrimp heads to the inside of the miso soup
- Cut a few slices of roe
- Place the shrimp on a plate, drizzle with the hot soup, add the lettuce and katsuobushi
