Maggiorana Essiccata
Dried marjoram retains the aroma and flavor of fresh marjoram. It has a similar taste to fresh marjoram, but tends to be more concentrated. The aroma is characterized by herbaceous and slightly sweet notes, with a warm and enveloping sensation.
Chef's tip
Dried marjoram goes well with leavened products and desserts, where it releases exceptional aromas, or infused to create a sauce to accompany salt cod.
What makes Ordine Contadino flowers and herbs special?
The flowers and herbs are harvested by hand and taken to the drying rooms within minutes, where they are placed on frames. The company practices natural drying by dehumidifying the air without increasing the ambient temperature. The herbs, first defoliated, and the dried flowers are placed in paper bags to be stored at controlled humidity and temperature. This process, combined with the chemical-physical/organic characteristics of the soil and the climatic conditions of the area (temperature range/sun exposure/altitude), results in a dried product with a high concentration of essential oils and high color yield over time.

Ordine Contadino was founded in Gresta, a mountain village in the province of Trento where there is an atmosphere of detachment from reality, but at the same time everything is part of a single natural landscape. For Ordine Contadino, the land is the exclusive source of wealth, rediscovering primitive food.
Ordine Contadino's research aims to activate dormant spaces by traversing nature to create a new balance. Listening to the stories of the inhabitants has helped to understand the place: redeveloping the landscape as an improvement, but also to revive the spirit of the place and its inhabitants and bring distant traditions back to life.
