Langoustines are among the most beloved crustaceans because their white, delicate and soft flesh is a perfect match for many types of preparations.  They are distinguished from shrimp by the presence of two particularly developed front claws.

Sicilian Langoustine is much more fragile than those from colder seas, so to preserve the raw material and prevent the claws from breaking, the product is glazed with water.

The scampi come in a block of ice, which only needs to be thawed at the time of preparation.
Individually frozen (IQF), large size langoustine package presents about 10 pieces per tray.
