Lafitte ducks
Ducks come from an ancient slow-growing strain and are fattened with non-GMO whole corn kernels, raised outdoors in a natural setting for a minimum of 102 days. They are considered the best ducks for foie gras, born from the cross between the male Barberie and the female Rouen or Pekingese. The Lafitte duck follows a slow growth and is recognizable by its black and white coloring-a distinguishing feature of absolute quality.

Because ducks are traditionally fed, the foie gras and meat have a rustic taste and unique texture. Foie gras escalopes boast an enviable ease of use; simply blanch them 30 seconds per side for a creamy and tasty appetizer. Duck breast is generally enjoyed rare or pink to extract all the unmistakable aroma of duck meat.
