Italy is also famous for its Gorgonzola cheese but not everyone knows that there are two kinds of Gorgonzola: the creamy and sweet one and the spicy one. The first is also the best known, soft and not spicy. The other one has a firmer paste and is much more pungent on the palate, it ages at least 90 days. The main difference between sweet and spicy gorgonzola is the higher whey content, which makes the paste softer and gives it a more mild taste.

The Delicious Buffalo Mozzarella

The production of cheese in Italy is impressive. Among all types of Italian cheese and the most renowned and recognized products in the world, how can we not mention Buffalo Mozzarella? Buffalo Mozzarella is an Italian excellence and a true icon of Made in Italy.

Longino has selected a special producer who is Barlotti factory. They transform buffalo milk into a delicacy in the form of mozzarella, braids and chunks to please even the most picky eaters. The Barlotti Cheese Factory, established in the early 1900s, is one of the oldest companies in the Sele Plain of Paestum, in Campania. This area is a natural habitat for grazing buffalo, from whose precious milk are produced, not only Mozzarella but also other specialties, all rigorously made with buffalo milk from Campania.

Mozzarella di Bufala from Campania is made only from fresh whole buffalo milk. Mozzarella usually has a round shape, but it can come in other forms. In fact, depending on the type of processing, we can have cheese chunks or braids. The color is white, it has a very thin rind, while the paste is made up of thin leaves that melt. When cut, the mozzarella has a slight white draining, with the scent of milk enzymes. The flavor is delicate and very characteristic, but intense when smoked.

Over time, another producer has joined Longino's mission. Guffanti family has specialized in the selection, aging and refining the best Italian and international dairy products. The experience on Gorgonzola, which is still their trademark, has been progressively transferred to all other types of cheese.

Get ready to prepare a gourmet cheese platter, full of taste and with the typical taste of freshly milked milk. And if you're wondering what to eat mozzarella with, just think about the most famous Italian appetizers such as Mozzarella and Parma Ham or the Caprese salad, for an authentic Italian food experience without even travelling to Italy.

Parmigiano Reggiano: the true essence of Italy

If Mozzarella is the queen of Italian gastronomy, then Parmigiano Reggiano, also known as Parmesan cheese, is the king of Italian food culture, one of the most exported Italian products. The Red Cow is the indigenous breed from Reggio Emilia which has been chosen by Luigi Guffanti cheese factory for producing Parmigiano Reggiano. This special breed has a reddish color and its milk is excellent. To get the name Parmigiano Reggiano, parmesan must be produced exclusively in the provinces of Parma, Reggio Emilia, Modena, Bologna, or Mantua and parmigiano wheels must follow strict production quality standards.

Longino shop proposes another Parmesan, the Parmigiano di Montagna, which means Mountain Parmesan because it is made with cow's milk produced at altitudes of over 1000 meters. These Parmigiano Reggiano wheels age for about 30 months, thanks to a natural ventilation process.

Very often, people worry about their lactose intolerance: is parmesan lactose free? Well, the answer is yes, Parmigiano Reggiano is naturally lactose-free because of the traditional production process. Parmesan is worldwide one of the most used ingredients in the kitchen, you can simply grate it on top of your favorite pasta dishes such as lasagna and fettuccine, or simply cutting it and having a tasting with friends, or even using it to make a delicious parmesan white sauce.
